We all love classic buffalo wings , but this Buffalo Chicken Thighs Recipe takes those flavors to a new level.
I added barbecue sauce because it just does add sweetness, but the thick, sugary base helps the sauce caramelize under the broiler creating a perfectly sticky and charred glaze that regular buffalo sauce can’t achieve on it’s own. The best barbecue sauce to use is Sweet Baby Rays “Honey” Barbecue Sauce . It will give you that sweet and tangy taste with a hint of tomato.
A close friend of mine who used to be a chef always told me to buy chicken thighs with skin on and bone in. The reason why is the skin gets incredibly crispy in the oven and it also seals in the juices of the chicken making it crispy and juicy at the same time, while the bone-in meat stays unbelievably tender and flavorsome

Since trying Buffalo wings in NYC a few years ago…I was a mild-ish fan and much younger, ignorant to Buffalo chicken since we don’t (or didn’t) really do Buffalo flavours in Australia…or I should say, they aren’t as readily available in comparison to American restaurants and diners.

Remembering the flavour and checking out a few recipes, I decided to settle on a concoction from the voices in my head. Barbecue sauce mixed with Buffalo flavour.

And of course, being a blogger and all, I have to taste test the recipe three times before I let it loose on the world ‘wild’ web. Let me just say it was enough to blow my innocent taste buds into a sinful and fiery rage of a rich and sinful buffalo flavour, with the added hint of sweetness from the barbecue sauce. Served with creamy Avocado slices to cool down the rage going on…this was a flaming hit. This isn’t the end of the road! On the rare occasion you have any leftovers (though let’s be honest, it’s unlikely), you can easily transform them into this fresh and zesty Garlic Lime BBQ Chicken Salad . Honestly, what could top that?

- ▢ 3 tablespoons barbecue sauce
- ▢ 1 clove garlic minced
- ▢ 1/4 teaspoon onion powder
- ▢ 1 teaspoon cayenne pepper or chilli powder or chilli flakes
- ▢ 1 teaspoon white vinegar
- ▢ 1 teaspoon granulated sweetener or sugar – optional
- ▢ 1 pinch salt to season
- ▢ 6 fillets chicken thighs bone in with skin
- ▢ 1 large Avocado sliced
Instructions
- Preheat oven 220°C | 430°F.
- In a shallow bowl, mix together the hot sauce, butter, barbecue sauce, garlic, onion powder, cayenne pepper, vinegar and sweetener (or sugar if using). Divide half of the sauce and reserve for later into a separate bowl or small cup/jug. Add the chicken thighs into the bowl and evenly coat.
- Fry thighs in batches (about two at a time), in a preheated large skillet or oven proof pan on medium-high heat until browned on all sides. Change oven setting to grill (or broil) on medium-high heat. Place all thighs back into the pan and allow to continue cooking and crisping under grill/broiler (make sure your pan is on the middle shelf), until cooked through (about 10-15 minutes).
- Once completely cooked, pour the remaining sauce over the chicken thighs and serve with sliced avocado.

I know weeknights are crazy! You want an amazing Taco Tuesday, but you need it FAST. These are my secret weapons for getting delicious tacos on the table in under 30 minutes.
- Prep Ahead: Chop your lettuce, tomatoes, and onions in the morning or the night before. Store them in airtight containers in the fridge. When it’s time to eat, you just have to set them out!
- Use Smart Shortcuts: Don’t be afraid to use pre-shredded cheese, a bag of slaw mix, or a good quality store-bought pico de gallo or guacamole to save time. You can find pico de gallo in the refrigerated section, I love the one from Trader Joe’s . It’s known for being consistently fresh, chunky, and having a great flavor. My biggest tip for any store-bought pico is to drain off any extra liquid at the bottom of the container and give it a stir. If you want to make it taste homemade, add a quick squeeze of fresh lime juice and a little chopped cilantro. It makes all the difference!
- Cook The Meat in Batches: I love to cook a double batch of taco meat on Sunday. I use half for dinner that night and save the other half for Tuesday. It reheats in minutes and its good to store in an airtight container in the fridge for 3 to 4 days.
What to stuff in a Perfect Taco?
Building the perfect taco is an art, and it’s all about the layers! Here’s my guide to the essential components.
- The Tortilla: Choose your base! Flour tortillas are soft and pliable, great for over-stuffed tacos these are my personal favourite, I use the Tortilla Land uncooked flour tortillas. You find them in the refrigerated section and cook them in a hot pan for about 30 seconds per side. They puff up and taste incredible. Corn tortillas offer an authentic, slightly sweet flavor and are amazing when quickly charred on a gas stove or in a hot pan. Hard Shells give you that classic, satisfying crunch.
- The Protein: While the recipes below give you tons of options, don’t be afraid to mix it up! Pick from seasoned ground beef, shredded chicken, spicy chorizo, or black beans for a great veggie option.
- The Toppings (The Best Part!): Get creative with a taco bar! Set out bowls of lettuce, tomatoes, onions, cilantro, jalapeños, cheese, sour cream, salsa, and guacamole!
