What Goes Into Turkey Satay

This Turkey Satay comes together with simple pantry staples and a handful of fresh aromatics.
- Light Coconut Milk: Keeps the sauce creamy without the heaviness of full fat coconut milk, so the flavor stays rich while the dish stays lighter.
- Powdered Peanut Butter: Adds deep peanut flavor with fewer calories, and helps the sauce thicken without overpowering the turkey.
- Turmeric: Brings a warm golden color and a subtle earthiness that makes the satay taste deeper and more aromatic.
- Turkey Breast Fillets: Lean, tender, and perfect for quick marinades. They absorb flavor fast and stay juicy when cooked on skewers.
Note: Please see recipe card at the bottom for a full list of ingredients with measurements.
How To Make Turkey Satay

- Soak the Skewers: Place the wooden skewers in cold water for thirty minutes so they do not burn while cooking.

- Thread Turkey: Slide the cubed turkey breast onto the soaked skewers and set them aside while you prepare the marinade.

- Whisk the Marinade: Combine all marinade ingredients in a shallow dish and whisk until the mixture is smooth and well blended.

- Marinate the Skewers: Add the turkey skewers to the dish and coat them evenly, letting them sit for one hour or overnight for deeper flavor.

- Cook First Side: Spray a pan with coconut oil spray and cook half of the skewers over medium until the underside begins to brown.

- Turn and Finish Cooking: Flip the skewers and continue cooking until the turkey is done, then repeat with the remaining batch.

- Thicken the Sauce: Pour the reserved marinade into a small pot and simmer it until it thickens, adding a splash of water only if needed.

- Serve and Enjoy: Arrange the skewers on a plate, spoon the warm satay sauce over the top, and serve with coriander, rice, or vegetables.
Turkey Satay pairs beautifully with dishes that add freshness and comfort in every bite. Try it with Caprese Garlic Bread for a bright, savory side that wipes up the extra satay sauce in the best way. If you want something heartier, Fried Rice with Bacon brings a salty and smoky contrast that makes the whole plate feel more indulgent. For something fun and a little unexpected, Mini Caprese Deep Dish Pizzas add a warm tomato and cheese hit that plays so well with the creamy peanut flavors.

Tips For Making Turkey Satay
- Let the turkey sit in the marinade for as long as you can. An overnight rest gives the best flavor and helps the pieces stay juicy when cooked.
- Cut the turkey into even sized cubes so they cook at the same rate and stay tender all the way through.
- Do not rush the sauce. Let it simmer gently so it thickens naturally and carries all the flavor from the marinade.
- If you are grilling instead of pan cooking, give the skewers a light spray of oil before placing them on the heat to prevent sticking.
One hour is enough for good flavor, but overnight gives the turkey a deeper, richer taste. Just keep it covered in the fridge until you are ready to cook.
If you want a thicker sauce, let it simmer a little longer. If it feels too thick, add small amounts of water until it reaches the texture you like.
You can replace the peanut butter with almond butter or cashew butter. The flavor will be slightly different, but the texture will still be creamy and delicious.

- ▢ 3 tablespoons powdered peanut butter
- ▢ 1 tablespoons crunchy peanut butter adjust to your tastes
- ▢ 2 tablespoons brown sugar packed
- ▢ 2 pinches salt to season
- ▢ 1.5 lbs turkey breast fillets cubed
- ▢ 12 wooden skewers
- ▢ Coconut oil spray
- ▢ extra water if needed
- ▢ 1 handful fresh coriander leaves
Instructions
- Soak skewers for 30 minutes. Thread turkey pieces onto skewers and set aside.
- In a separate large shallow dish, combine all marinade ingredients together and whisk until combined. Add skewers and marinade for about an hour OR over night for a deeper flavour.
- When ready to cook, drain the turkey skewers, reserving the marinade. Spray a nonstick pan/skillet with the oil spray, and fry in two batches (I did 6 per batch) on medium heat until underside is browned. Turn and cook for a further 4 – 5 minutes, or until turkey has cooked through. Alternatively, bake in a pre heated oven under the grill/broil settings on medium – high heat until cooked through, turning once after about 10 minutes.
- Transfer the reserved marinade to a small pot or pan, and bring to a boil over high heat. Reduce heat to medium, and cook while stirring for 5 minutes or until the sauce is fragrant and thickens. Add extra water by the tablespoon only if sauce is too thick.
- Serve skewers with coriander leaves, steamed rice or vegetables and pour the satay sauce over.
