In my defence…my children are on school break. And this is your cheat meal recipe of the week. And who doesn’t love dessert for breakfast recipes anyway? What about a breakfast version of a Churro Ice Cream Sandwich? What about those of us who are counting points or calories. Or those of us that can’t be bothered with donut dough, piping bags and deep frying?

Churro French Toast Ice Cream Sandwich

I know I’ve given you an abundance of Churro recipes. Churro skillet cookies , Churro empanadas , Churro lava cakes and those Churro donut holes even!

But how did these happen? I don’t have a reason besides the obvious one of a mild Churro obsession. Okay. So maybe not so mild.
How to make a Churro French Toast Ice Cream Sandwich
Looking at more Churro Ice Cream pictures than I cared for, I needed a round type of bread. My option was a round baguette.
- Slice into 1/2-inch thick slices to maintain that ‘churro’ shaped disc most famous on these sandwiches
- Dip in an egg wash full of cinnamon and vanilla churro flavour
- Pan-fry in butter because, well, butter….

Then coat in cinnamon sugar. From here you can choose to use your favourite ice cream flavour or frozen yogurt depending on your dietary needs and preference (and cravings).

Sandwich those Churros together with the ice cream and watch your ice cream melt in a puddle of cinnamon sugar heaven. You’re welcome.
And if you really want to impress? Serve it with a chilled glass of creamy eggnog . The warm spice of the churros and the rich sweetness of the eggnog are a match made in dessert paradise.

French Toasts:
- ▢ 2 large eggs
- ▢ 1/4 cup milk
- ▢ 1 tablespoon granulated sugar or natural granulated sweetener – OPTIONAL
- ▢ 1/2 teaspoon ground cinnamon
- ▢ 1 teaspoon pure vanilla extract
- ▢ 1/2 french baguette sliced into 1cm/half inch rounds to make 12 slices
- ▢ 2 tablespoons butter divided
Coating:
- ▢ 1/4 cup cinnamon sugar or 1/4 cup granulated sugar + 1 teaspoon ground cinnamon
- ▢ Additional: ice cream or frozen yogurt
Instructions
- Whisk the eggs and the milk together with the sugar/sweetener, cinnamon and vanilla extract in a wide shallow bowl. Dip the bread into the egg wash, rotating quickly to soak evenly (don’t soak for too long or you’ll end up with soggy french toast).
- Prepare a separate shallow bowl with the remaining sugar (or sweetener) and ground cinnamon (or cinnamon sugar if using) for coating, Heat a non stick pan/skillet with 1/2 tablespoon of butter. When the pan is hot, fry the egg-soaked bread in batches of 4 or 5 slices on low-medium heat on each side until golden. Immediately dip each bread into the cinnamon sugar mixture to evenly coat (use tongs to avoid burning your fingers). Fry remaining batch until golden and repeat coating with remaining toasts.
- Allow toasts to cool slightly. Take one churro toast; top with a scoop of ice cream (or frozen yogurt), and place another toast on top. Gently press the top down to adhere the toast to the ice cream. Serve immediately!

I know weeknights are crazy! You want an amazing Taco Tuesday, but you need it FAST. These are my secret weapons for getting delicious tacos on the table in under 30 minutes.
- Prep Ahead: Chop your lettuce, tomatoes, and onions in the morning or the night before. Store them in airtight containers in the fridge. When it’s time to eat, you just have to set them out!
- Use Smart Shortcuts: Don’t be afraid to use pre-shredded cheese, a bag of slaw mix, or a good quality store-bought pico de gallo or guacamole to save time. You can find pico de gallo in the refrigerated section, I love the one from Trader Joe’s . It’s known for being consistently fresh, chunky, and having a great flavor. My biggest tip for any store-bought pico is to drain off any extra liquid at the bottom of the container and give it a stir. If you want to make it taste homemade, add a quick squeeze of fresh lime juice and a little chopped cilantro. It makes all the difference!
- Cook The Meat in Batches: I love to cook a double batch of taco meat on Sunday. I use half for dinner that night and save the other half for Tuesday. It reheats in minutes and its good to store in an airtight container in the fridge for 3 to 4 days.
What to stuff in a Perfect Taco?
Building the perfect taco is an art, and it’s all about the layers! Here’s my guide to the essential components.
- The Tortilla: Choose your base! Flour tortillas are soft and pliable, great for over-stuffed tacos these are my personal favourite, I use the Tortilla Land uncooked flour tortillas. You find them in the refrigerated section and cook them in a hot pan for about 30 seconds per side. They puff up and taste incredible. Corn tortillas offer an authentic, slightly sweet flavor and are amazing when quickly charred on a gas stove or in a hot pan. Hard Shells give you that classic, satisfying crunch.
- The Protein: While the recipes below give you tons of options, don’t be afraid to mix it up! Pick from seasoned ground beef, shredded chicken, spicy chorizo, or black beans for a great veggie option.
- The Toppings (The Best Part!): Get creative with a taco bar! Set out bowls of lettuce, tomatoes, onions, cilantro, jalapeños, cheese, sour cream, salsa, and guacamole!
